Feta Sto Fourno = Baked Feta ?
Such a simple dish that you can mash up with whatever you have in the fridge. You can make this with capsicums or tomatoes (the acidic nature of either vegetable makes for a perfect taste with the salty feta) I had some cherry tomatoes in the fridge so I used them. As you can use either or, or add something new to the mix I’ll give you an idea of info on what to do below. Ingredients and method for this is loose as it’s a guide for your tastebuds. Let them lead you!

Ingredients and Method mash up:

What you’ll need is some feta (around 200 grams) your chosen veggies, some olive oil and some oregano.

Slice up your veggies (I used 10 cherry tomatoes sliced) and put half at the bottom of a small baking dish or some foil. Add the square of feta on top. Drizzle with olive oil and sprinkle with dried oregano. Then add the other half of your chosen veg to the top. Now put the dish in the oven. If your using foil – wrap up like a parcel and put in the oven for approximately 15 minutes.

Open up after the passed time and enjoy with some bread or your favourite side dish. Ps: the oil left in the dish is divine.
