Zucchini Slice

Zucchini slice is one of my favourite quick dinners on a weekday. I usually make it when I have some left over Lebanese rice as it makes the slice super filling and densely delicious. If you don’t have Lebanese rice left over like I do, you can substitute it for cooked white rice.

Ingredients:

1/4 cup olive oil

1 small onion, finely chopped

1 garlic clove, crushed

1 carrot, grated

1 large zucchini, grated

1 cup of grated pumpkin

1 1/2 cups cooked white rice, cooled

4 eggs, whisked

1 1/2 cups grated tasty cheese

1/2 cup crumbled feta

1/2 cup milk

Salt and pepper to taste

Method:

Preheat oven to 180 degrees fan.  Grease a large ovenproof dish.

Heat one tablespoon of the oil in a large frying pan, over medium heat. Add onion and garlic and cook gently for a few minutes or until soft.

Add into a bowl to cool. Add in all the grated veggies, and both cheeses. Mix well.

Add rice, beaten egg, milk, remaining olive oil and season to taste. Stir well to combine.

Press mixture into pan. Bake for 35 minutes, or until mixture has set and top is golden. Cut into squares or slices and enjoy!
