Chocolate Chip Cookies

Ingredients:

250 grams butter, partly melted

340 grams caster sugar

300 grams chocolate chips/melts

1 teaspoon vanilla extract

2 large eggs

3 cups self-raising flour

2 teaspoons salt

Method:

Preheat your oven to 160 degrees fan.

Beat together the butter and sugar until light and creamy with a hand held or stand mixer. Add in the vanilla and eggs one at a time making sure to incorporate well.

Sift in the flour and baking powder and add in the salt. Mix until just combined. Fold in the choc chips.

Line oven trays with baking paper and place heaped spoonful’s of the mixture onto the tray for larger cookies or roll into small balls and flatten for smaller cookies (mixture will spread) Cook for 15 minutes.

> To make these double choc, add in 1/2 cup cocoa powder and only use 2 1/2 cups flour.
