Who said that cakes have to be sweet? I made this delicious savoury cake with olives, sun-dried tomatoes, feta, parsley, mint and olive oil. I lined my bundt sesame seeds before the bake for a special finish. Perfect for lunch, as a side dish or with a cuppa.
Ingredients:
2 cups grated Romano or Parmesan cheese
1/2 cup crumbled feta cheese
3 cups of SR flour
6 eggs
2 cups milk
1/2 cup vegetable oil
1/2 cup olive oil
1/2 cup pitted olives
1/2 cup sliced sun-dried tomatoes
1.5 tsp baking powder
A handful combined fresh mint and fresh parsley.
1 tblsp sesame seeds
Salt & Pepper to taste
Method:
Preheat oven to 170 degrees fan.
Spray your bundt tin with cooking spray and sprinkle with sesame seeds.
Whisk the eggs with the milk. Add in the oils and cheeses and mix well. Add in the remaining ingredients till incorporated.
Mix all above ingredients together and pour into greased tin.
Bake for 40-45 minutes.
Cool in tin for 10 mins before flipping onto a cooling rack.
