Mushroom & Avocado Smash

Mushroom Smash Breakfast –  A great way to start my day!

Ingredients:
6 button mushrooms
1/2 Avocado
1/4 Cup crumbled feta cheese
1 Tbsp cooking butter
2 Tbsp tomato pesto
2 thick slices of sourdough
A squeeze of lime juice
A pinch of fresh parsley
Olive oil
Salt & Pepper

Method:
Melt the butter in a small saucepan and slice the mushrooms up thickly and add them to the saucepan, season and sauté. Add in a pinch of fresh parsley. Turn the heat off when they are cooked to your liking.

Make your avocado smash by mashing up your avocado with the feta cheese, salt & Pepper to season, a squeeze of lime juice and a drizzle of olive oil.

Now toast your bread… once that is done spread generously with the tomato pesto. Dab on the smashed avocado and top with those delicious mushrooms.

>> Add a poached egg for a larger breakfast.
>> Add some tomato to the smash to emphasise the pesto taste.
