450g Sweet potato cut into chunks
175g broccoli florets
2 garlic cloves, crushed
1 Onion finely chopped
180g haloumi cheese, grated
Flour for dusting
Salt & Pepper
Boil the sweet potato in a saucepan until it is tender. Drain and mash. Cut the broccoli into smaller pieces and blanch until tender. Add into the sweet potato mash and mix through.
Stir in the garlic, onion, cheese and some salt and pepper to season. Combine the mixture well and shape into equal sized patties. Coat them with flour and allow them to chill in the freezer for at least an hour. The mixture will be soft and tender but this is completely normal.
Heat the oil in a fry pan and fry the burgers in batches until cooked through and golden.
These are delicious with a side salad, sweet chilli sauce and even tzatziki on the side.
