Greek Style Roasted potatoes in a flash⚡️These are a great little side dish – or of course a full meal when you add some more favourites like chick peas, pumpkin and zuccini. Details below ⤵️
Ingredients (side meal for 2)
6 Medium sized potatoes (whatever you have or like) diced into small cubes
Fresh or dried Rosemary
Fresh or dried Thyme
Dried Oregano
The Juice of 1 lemon
Salt & Pepper
1/2 Cup water
Method:
Preheat your oven to 180 Fan
In a baking tray add your potatoes, herbs, salt & pepper. I use my hand as a guide on how much to add… I like a strong flavour and used dried herbs for my dish – approximately 2 tablespoons of each herb.
Drizzle generously with olive oil and add in the water. Mix it all together with your hands and pop the dish in the oven for approximately 30 minutes. Cooking time will depend on your potatoes and the size you cut them too.
