I’ve added my favourite Greek chocolate in this recipe. You can use any chocolate you fancy, it’s also delicious without the chocolate
1⁄2 cup butter
1 cup sugar
2 eggs, beaten
3 ripe bananas, mashed
1 1⁄2 cups self raising flour
1⁄2 teaspoon vanilla extract
100g Chocolate of your choice (optional)
Preheat oven to 180 degrees fan
Cream together butter and sugar with an electric mixer. Add the vanilla extract.
Add eggs in one at a time and combine well. Add in the bananas whilst still beating with the mixer until the mixture is well combined.
Sift in the flour and chocolate If you are using it and mix with a wooden spoon until just combined. Don’t over-mix as your loaf will be rubbery.
Pour into greased and floured loaf and bake for approximately 45 minutes depending on the strength of your oven. Allow the bread to cool and dust with icing sugar.
