Posh Bagels – my take on the traditional cucumber sandwiches! You can use this English favourite spread on any kind of bread.
Zesty cream cheese spread Ingredients:
I small tub of light spreadable cream cheese
The zest of one small lemon
The juice of the one small lemon
1/4 Cup finely chopped dill (plus more for garnish)
Salt & Pepper
Method:
Remove the cream cheese from the tub, add in the lemon zest and half of the lemon juice. Stir until well combined. Now you need to taste and adjust.. you’ll need to add some salt and pepper to taste. Then if you’d like more lemon, add the rest of the juice.
Add the dill and give it a final stir.
Spread on your favourite breads or a perfect accompaniment for a Salmon dish.
I served mine with cucumber ribbons on a bagel.
Tip: Put the cream cheese mixture back into the container for easy spreadable access!
