Pancake Bake

This is a perfect bake for breakfast, brunch, lunch or lets face it… even dinner! This bake is basically a large, fluffy pancake dotted with berries throughout creating delicious excitement.


3 eggs

2 1/2 cup whole milk

1 tablespoon vanilla essence

3 cups self-raising flour

1/2 cup caster sugar

*Alternatively, you can use your favourite pancake pre-mix*

1 1/2 cups frozen berries.


Pre-heat oven to 160 degrees fan.

Spray a roasting dish approximately 30×25 cms with cooking spray.

If using the recipe above, add all the ingredients into a bowl and mix well with a whisk until well incorporated.

Pour the batter into the pan and tap lightly on the benchtop to remove any air bubbles. Dot the pan with the frozen berries and place into the oven.

Bake for approximately 15-20 minutes or until the mixture bounces back when you touch it.

Serve with anything your heart desires! My heart quite fancies maple syrup, cream and ice cream.
