Broccolini, Green Beans, Spinach & Mushrooms in a Mediterranean Sauce

Good – Honest – Hearty – Healthy – YUM! This dish is all of these things and more. Its soul warming, good for the wallet and It wont disappoint!

Ingredients: Serves 4
1 bunch Broccolini
30 (ish) Green Beans, tails removed
15 Button Mushrooms chopped into thick chuncks
2 Cups Baby Spinach
1 Onion, finely chopped
1 tin crushed tomatoes
2 Tablespoons Tomato Paste
100 grams Feta Cheese
1 Tablespoon Zatar
1 Teaspoon Dried Oregano
Olive Oil
Salt & Pepper

Method:
Heat some olive oil in a heavy base pan, add in the onions and cook until fragrant.

Add in the mushrooms and saute until tender. Add in the green beans and cook for a few minutes before adding in the broccoli. You can leave the broccoli whole or chop off half the length. I chopped mine off as my doggies love broccoli.

Stir in the tomatoes, tomato paste, the zatar and oregano then season with salt & pepper. Add in 1/2 cup of water and the spinach. Cover with a lid and allow to cook until the vegetables are cooked to you liking.. but not too long! I like mine cooked well with a bit of crunch.

Uncover, stir well and plate up. Crumble up the feta and sprinkle on top – YUM! Thank you @dodoni_feta

I served mine with Lebanese Rice and some Greek Yoghurt seasoned with Zatar and Olive Oil.
