Veggie Burger with Haloumi Fries – This was absolutely delicious. Check out my spin below:
Ingredients: Serves 4
4 large potatoes
2 large carrots
1 Cup peas
1 Onion – grated
1/4 parsley finely chopped
1 egg
1 Cup breadcrumbs
2 Tablespoons Mediterranean herb mix (G-Fresh)
1/4 cup zatar
1 Cup plain flour
Olive oil (or rice bran oil)
Everything you want to add to your burgers. I had the buns, hummus, lettuce, tomato, cheese and beetroot
Method:
Add a pot of salted water to the hob until the water is boiled. Meanwhile peel the carrots and potatoes and chop them into chunks and add to the water pot. Cook until tender. A few minutes before you remove the carrots and potatoes, throw in the peas and cook through. Remove, strain and put into a bowl and allow to cool slightly.
Prepare your haloumi chips. Cut the haloumi into chip shapes. Mix the flour and zatar in a shallow bowl and coat the fries. Set aside.
To the potato mixture, add in the grated onion, one beaten egg, the breadcrumbs, parsley, mediterranean mix plus some salt and pepper to taste. Combine well and shape into patties.
With two fry pans on the hob, add some olive oil to each and heat. One pan should have 2 tablespoons of oil for the patties. The other should have 1cm of oil for the fries. Once ready, fry the haloumi chips in batches and cook the patties until browned. If you want to use something with a higher burn factor, try rice bran oil.
Prepare your buns whilst everything cooks – assemble and serve. Add some Greek yoghurt and a wedge of lemon to your serving plate.
