As the cooler nights creep in.. comfort food cravings are high! This quick and easy Mushroom & Green Bean Stroganoff dish will leave you wanting more. Recipe below ⤵️
450g button mushrooms – quartered
200g green beans
1 Onion finely chopped
1 tablespoon tomato purée
1 tablespoon whole grain mustard
150ml light sour cream
150ml thickened cream
1 tbsp paprika
1 tsp raw sugar
Salt & Pepper
Fresh flat leaf parsley
Heat the butter in a saucepan and add the onions to it. Cook until tender and fragrant.
Add in the mushrooms and sauté until they have softened and add in the green beans.
Season with Salt & Pepper and stir in the paprika, tomato purée, and wholegrain mustard. Add 1/2 cup of water to the pan and stir to form a sauce. Cook for approximately 5 minutes.
Add in the sour cream, thickened cream and sugar and cook gently until the green beans are al dente.
Serve this delicious dish with some steamed rice and garnish with sprinkled paprika and fresh parsley.
