Mexican BBQ Fajitas – Perfect with your favourite crunchy salads, salsa and of course… cheese!
Ingredients:
1 Red Capsicum – sliced
1 Green Capsicum – sliced
250g button mushrooms – sliced
200g black beans
1/4 cup fresh parsley – chopped
1/4 cup fresh coriander – chopped
1 Onion sliced into thin pieces
1 Clove of Garlic – diced
1 Small fresh chilli – diced
1/2 tsp dried oregano
1 tsp cumin
1 tsp cinnamon
1 tsp smoky paprika
1/4 cup bbq sauce
Olive oil
Method:
Add some olive oil into a large skilled and gently sauté the onions, garlic and chilli until fragrant.
Add in the mushrooms and sauté till they are tender. Add in the Capsicums, oregano, cinnamon, cumin, paprika, bbq sauce and 1/2 cup of water. Cook until vegetables are tender and the sauce has thickened.
Add in the beans, parsley and coriander and cook for a further 2-3 minutes.
Sprinkle with some sesame seeds and serve with your favourite sides and corn tortillas.
