Mediterranean Roasted Vegetables

There isn’t much to this recipe… but the flavour is so delicious and intense. It uses a Mediterranean spice mix that I understand won’t be available everywhere so I will list some of the ingredients here: My mix has dehydrated Garlic, onion, carrots and celery in it. In addition to this it tastes like there is a background taste like sundried tomatoes in it.

My ingredients were the veggies I had on hand to me which were:

Potatoes, carrots, capsicum, zucchini and pumpkin.

I chopped these up into little cubes, lathered with olive oil, my med spice mix, roughly chopped garlic and pepper. These were then added into the oven that was set to 180 degrees fan and cooked until they were soft but crunchy.

Served with a simple side salad and crusty bread – this was a simple comfort dish at its best.

I had a heap of veggies left over too which I used in other dishes.
