Homemade Granola

My homemade Granola recipe is easy and delicious! The great part about it is that there are no rules.. you can add what you like to it. I love opening my pantry and seeing what is in there, then making something because of whats there as opposed to having to go out and buy everything. Have a go and come up with your own flavours!

Ingredients:
4 cups whole rolled oats
2 cups raw nuts, roughly chopped (I used flaked almonds, whole almonds and walnuts)
½ cup raw seeds (I used chia and sunflower seeds)
1 cup unsweetened dried fruit (I used cranberries and raisins)
1 cup toasted coconut flakes
5 Tablespoons Honey
4 Tablespoons light tasting cooking oil (I used rice bran oil)
1 Tablespoon vanilla extract
2 large pinches of salt

Method:
Preheat the oven to 180 degrees fan
Combine all ingredients in a mixing bowl. Use your clean hands to mix well and toss to coat; it will be sticky and messy but actually quite therapeutic!

Spread the mixture in a thin layer on a baking tray lined with parchment paper and bake for 10-15 minutes, until lightly toasted. As this recipe made enough to fill 2 baking trays, I toasted one lot more for some different textures.

Once cool, mix through the coconut flakes.

Serve with yoghurt and fresh fruits, eat it with some milk as cereal or have it as a snack as is.
