Fasolakia me Patates/Green Beans with Potatoes
1 onion, finely chopped
1 clove of garlic, minced
1 teaspoon granulated sugar
1 teaspoon of dried oregano
500g potatoes, quartered lengthways
1 heaped tablespoon of tomato paste
50g white wine
400g canned chopped tomatoes
1 teaspoon plant based chicken stock
1 kilo green beans
Salt & pepper
Place a large deep pot over high heat and drizzle in some olive oil. Add in the onion and garlic and cook until they are fragrant and soft.
Add in the potatoes and cook for 5 minutes on a low heat. Add in the tomato paste and wine, mix well and cook for a few minutes.
Add in the chopped tomatoes, oregano, water and stock. Cover the pot and allow to simmer until the potatoes are half cooked then add in the green beans. Cook until the beans are softened and the potatoes completed cooked.
Remove the pot from heat and add the chopped mint and dill. Serve with feta cheese and rustic style bread.
