Citrus and Zuccini Loaf

Citrus and Zuccini Loaf.

This recipe was made to celebrate the wedding of Prince Harry and Meghan Markle… aww I love a royal wedding!

Ingredients:
3 cups Self Raising flour
2 cups icing sugar
Zest of 1 large lemon and one large orange
3 large eggs
1 cup olive oil
The juice of the lemon and the orange
1 1/2 teaspoons vanilla extract
2 cups grated zucchini

Method:
Preheat oven to 180 degrees fan Grease and flour either two 8 x 4 inch loaf pans or if you are like me have a sizeable loaf pan, use one.

In a mixing bowl, combine sugar and orange zest and lemon zest. Rub the ingredients together with your fingers until fragrant.

Add in the olive oil, eggs, half the juices and vanilla extract and whisk well. Add in the zucchini and the flour and whisk until just combined.

Pour into your loaf tin and bake for approximately 60-70 minutes.

Place the loaves on a cooling rack and cool for 15 minutes. Loosen the sides of the bread with a knife. Carefully remove the loaves from the pans. Let cool completely on rack.

While the bread is cooling, make the citrus glaze. In a small bowl, combine the icing sugar and the remaining lemon and orange juice. Whisk until smooth. Drizzle the glaze over the loaves. Slice and serve.
