Chocolate Mousse

This recipe is quick and easy and completely addictive…not only in taste but also in addiction to adaption. This recipe can easily be adapted to incorporate your favourite flavours although chocolate mousse isn’t too bad at all!

Ingredients:

200g milk chocolate

30g unsalted butter

3 eggs, separated into egg whites and yolks

1 tablespoon caster sugar

1 cup thickened cream

Method:

Place the chocolate and butter in a small saucepan over low heat and stir until melted and smooth. Stir through the egg yolks and set aside.

In a stand mixer, whisk the eggwhites until soft peaks form. Gradually add the sugar and beat until stiff peaks form.

In another bowl, whisk the cream until soft peaks form.

Add the whisked eggwhites through the chocolate mixture and gently fold the mixture together. Then add the whisked cream to tis mixture.

Spoon into serving glasses and refrigerate until set. Top with the raspberries to serve.
