Baked Omelette

The newest breakfast champion in our house! Baked Omelette in a loaf tin. You’ve seen these in the muffin tins, but I wanted to try something different. You can add anything you want! This is what went into ours ⤵️

Ingredients:
12 Eggs
5 Button Mushrooms, thinly sliced 
1 Zuccini, Grated
1 Small Red Capsicum
10 Small cherry tomatoes, halved
1 Small Onion, diced
1/2 Cup Grated Cheese (or feta)
Chopped parsley
Salt & Pepper

Method:
Pre-heat the oven to 180 Degrees fan. Spray your loaf tin with canola oil spray. Beat the eggs in a bowl, season with salt and pepper and pour into the loaf tin. Add the onion, Capsicum, tomatoes, mushrooms, Zuccini, parsley and cheese. Mix with a fork and put into the oven. Bake for approximately 20 minutes or until the eggs don’t wobble anymore.

Serve with baked beans (yum), toast and of course a morning cuppa.
