10 small button mushrooms, finely sliced
1 small red capsicum, finely diced
2 cups baby spinach
1 small brown onion, diced
1 cup tasty cheese, grated
1/3 cup feta cheese, crumbled
Salt & Pepper
Pre-heat your oven to 170 degrees fan.
Drizzle some olive oil into a oven safe deep dish fry pan (approximately 28cms in diameter)
Cook the onions on a low heat until fragrant then add in the capsicums and cook until slightly softened. Add in the chopped mushrooms and cook until lightly browned. Add in the baby spinach into the frypan and allow to wilt and for the water in the pan to evaporate.
Beat the eggs in a bowl, adding the salt and pepper to taste. Add in the cheeses then pour into the fry pan whilst gently stiring the ingredients into the egg mix. Do not stir more than 3-4 times otherwise the mixture may scramble.
Cook on a low heat for 5 minutes before putting the frypan into the oven to cook until the eggs are done. Approximately 20-25 minutes.
Remove from the oven and serve immediately.
